Avocado Deviled Eggs

Being 25 weeks pregnant means a rapidly growing belly and a ravenous appetite. This little protein and fat packed snack hits the spot every time though!

  • 4-5 hard-boiled eggs
  • 1 avocado
  • juice of half a lemon
  • salt
  • pepper 
  • Fresh Coriander to garnish (optional)
  1. Peel eggs and slice in half 
  2. Scoop out the egg yolks and place in a small bowl with the remaining ingredients
  3. Give the yolk mixture a good mash, place back into the egg whites and garnish with coriander.
note: recipe can be easily halved or doubled if required

That sounds YUM! Will definitely have to try it. I hear you on the ravenous appetite front...Dean looked in astonishment the other night with how many times I went to the kitchen and brought back a new snack to devour.

that sounds amazing! i love deviled eggs, would have never thought to put avocado in them though.

Ah, this sounds delicious. I never would have thought of adding avocado. We just had regular deviled eggs today for lunch (my boys love them) but next time I will try them your way.
